Baby Potato Fry

Baby Potato Fry is an easy and simple pan-fry roasted recipe made with small or baby potatoes. Lets have a look at the recipe.
INGREDIENTS
FOR PRESSURE COOKING:
- 2 cup water
- 9 baby potato / aloo
- 1 tsp salt
FOR MASALA:
- 2 tbsp oil
- 1 tsp mustard
- ½ tsp urad dal
- ½ tsp cumin / jeera
- pinch hing / asafoetida
- few curry leaves
- ½ onion, finely chopped
- 1 tsp ginger garlic paste
- ¼ tsp turmeric
- ½ tsp kashmiri red chilli powder
- ½ tsp coriander powder
- ½ tsp garam masala
- ½ tsp aamchur
- ½ tsp salt
- 2 tbsp coriander, finely chopped
INSTRUCTIONS

firstly, in a pressure cooker take 2 cup water and steam 9 baby potato with 1 tsp salt for 2 whistles.

cool completely and peel the skin of the potato.

in a large kadai heat, 2 tbsp oil add boiled potato.

saute and roast until the potato turns golden brown.

keep the roasted potato aside.

in the same oil splutter 1 tsp mustard, ½ tsp urad dal, ½ tsp cumin, pinch hing and few curry leaves.

also, saute ½ onion and 1 tsp ginger garlic paste well.

further, add ¼ tsp turmeric, ½ tsp chilli powder, ½ tsp coriander powder, ½ tsp garam masala, ½ tsp aamchur and ½ tsp salt.

now add roasted potato.

saute on low flame until spices are coated well.

finally, add 2 tbsp coriander and enjoy baby potato fry.
