GHEE RICE
INGREDIENTS
Rice – 1 cup
Salt to taste
Water – 2 cups
Onion – 2 (sliced )
Bay leaf – 3
Star anise – 3
Green cardamoms – 4
Ghee – 4 tablespoon
Strand mace – 2
Cloves – 6
Cinnamon – 3
Green chilli – 3 (chopped)
Coriander leaves – 2 teaspoon (chopped)
METHOD:
Soak the ricein water for at least 20 minutes, drain the water and keep it aside.
Heat a pan with ghee. Add cashew nuts and saute it till golden brown and add raisins and stir up. Set them aside in a plate.
In the same pan, add sliced onions and saute it well. Fry for a few minutes. These onions are used for garnishing.
Heat the ghee in a pressure cooker, and add the cinnamon, cardamom, cloves, bay leaf, star anise, chopped green chillies and a strand of mace. Then add sliced onion and fry till it turns light brown.
Now add the drained rice and fry for a few minutes. Add 2 cups of boiling water into it and add required amount of salt. Cover the cooker using the lid and cook the rice in a low flame. Remove lid and mix well. Remove it onto a serving plate.
Garnish it with fried onions, cashew nuts, raisins and chopped coriander leaves. Serve it with onion tomato curd salad and pickle is more delicious.
