LEMON RICE
INGREDIENTS:
Steamed Rice – 2 Cup (Basmati Rice)
Dry Red Chilly – 3
Green Chilly – 3
Coriander Leaves – 2 tablespoon (finely chopped)
Turmeric powder- ¼ teaspoon
Urad Dal – 2 teaspoon
Ginger – small piece (chopped)
Sesame Oil – 2 tablespoon
Peanuts – ¼ cup
Cashew Nuts – 7
Mustard seeds – 1 teaspoon
Split Bengal Gram – 1 Tablespoon
Curry Leaves – 2 sprigs
Lemon Juice – 3 Tablespoon
Asafoetida Powder – a pinch
Ghee – 1 teaspoon
Salt- to taste
PREPARATION:
Take a pan and heat oil in the pan. Add peanuts and cashew nuts into it. Stir until it turns light golden brown. Transfer them to a plate.
Add remaining oil in the same pan. Splutter mustard seeds and urad dal. Then add split Bengal gram. Sauté it well until it turns light brown in color. Now add the asafoetida powder, dry red chili, green chili, chopped ginger and curry leaves.
Sauté it for a minute. Add turmeric powder. Then add cooked rice, fried peanuts, ghee, cashew nuts and required amount of salt. Sprinkle lemon juice on it.
Mix well and covered the pan with lid. Cook it for 5 minutes.
Switch off the flame and add chopped coriander leaves on it.
Serve it hot with papads or serve the lemon rice plain.
