Vendakka Kichadi
Ingredients
Lady`s finger (Vendakka) -250 gm (cut into small roundels)
Grated coconut -1/4 cup
Green chillies -6 nos (4 chillies finely chopped)
Cumin seeds -1/2 teaspoon
Mustard seeds -1/2 teaspoon
Curd -1 1/2 cups
For seasoning
Coconut oil -3 tablespoons
Mustard seeds -1 teaspoon
Curry leaves – A few
Dry red chillies- 1 or 2 nos
Method
Beat the curd well.
Grind together coconut, 2 green chillies and cumin seeds into a fine paste.
Add crushed mustard seeds into the above coconut paste.
Mix together the beaten curd, ground paste and salt.
Heat some oil in a pan or a kadai. Splutter mustard seeds and saute red chillies and curry leaves. Add the remaining chopped green chillies and lady`s finger. Fry them till they turn golden brown. Add the curd mixture and heat it through. Remove from the flame.
