RICE FRUIT PUDDING

INGREDIENTS :

  • sticky rice – 2 cups of
  • sugar – 1/2 cup
  • clarified butter – 2 tablespoons
  • Preserved fruits – 1 cup full (different colour and variety )
  • Water – 1 cup
  • corn starch paste – 1 ½ tablespoons.

METHOD :

Cook the rice with enough water,sugar and clarified butter till it well cooked.Cover and keep it.

* Take a glass bowl that has a round bottom and arrange the fruits in colorful manner at the base.

Then take out some rice and place it over this. Press it down. Then arrange a second layer of fruits and arrange on the sides in such a way that the rice is not seen.

* The fruits should all be on the sides and the rice in the middle. Press it down and see that every thing is in the same level.

Now combine the water sugar and corn starch and bring to a boil. When it thickens pour over the rice, and keep it undisturbed for a while to set.

When ready to serve tilt the bowl on to a plate. A very attractive and delicious dessert.
