PINEAPPLE FRIED RICE

INGREDIENTS
Cooked Rice – 4 cup
Pineapple – ½ cup (chopped)
Oil – 2 ½ teaspoon
Red bell pepper – ¼ cup (diced)
Cashew nuts – 15 nos
Ginger – 1 tsp (chopped)
Garlic – 2 cloves (finely chopped)
Green onion – 4 (chopped)
Mixed Veggie – ½ cup (chopped )
Soya sauce – 1 tablespoon
Salt to taste
METHOD
In a pan , heat oil once warm , add the ginger , garlic and onion , cook for 4-5 mints ..saute well
Add the mixed veggies and give a quick stir. add the salt and red bell pepper sauté in medium flame until the mixed veggies are half cooked.
Then add the cashew nuts and chopped pineapples .saute until the vegetables till they are soft .
Add cooked rice into the pan and mix well. add the soya sauce sauté well .
Heat till the rice is heated all the way through.
Garnish with cashew nuts and spring onion.
Serve hot.
