Veg Tehri Rice

Veg Tehri Rice is a healthy and aromatic one pot meal rice recipe prepared with vegetables similar to Pulao recipe. Lets have a look at the recipe.
Ingredients
- 2 tbsp ghee/ clarified butter
- 1 bay leaf
- 1 inch cinnamon
- 4 cloves
- 1 black cardamom
- 2 cardamom / elachi
- 1 tsp cumin / jeera
- ¼ tsp pepper
- 1 onion, sliced
- 2 tsp raisins / kishmish
- 1 chilli, slit
- 1 tsp ginger garlic paste
- ½ potato, cubed
- 3 beans, chopped
- 1 carrot, chopped
- 10 cauliflower / gobi, florets
- 2 tbsp peas / matar
- 1 tomato, chopped
- ½ tsp kashmiri chilli powder
- ½ tsp coriander powder
- ¼ tsp cumin powder
- ¼ tsp garam masala
- 1 tsp salt
- 2 tbsp curd/ yogurt, whisk
- 1 cup basmati rice, soaked 20 minutes
- 2½ cup water
- 1 tsp kewra water
How to make Veg Tehri Rice
- firstly, in a large kadai heat 2 tbsp ghee and saute spices.
- now add 1 onion and saute till onions turn golden.
- further, add 2 tsp raisins, 1 chilli and 1 tsp ginger garlic paste. saute well.
- additionally, add vegetables and 1 tomato. saute well.
- further, add ½ tsp chilli powder, ½ tsp coriander powder, ¼ tsp cumin powder, ¼ tsp garam masala and 1 tsp salt. saute for 2 minutes.
- now keeping the flame on low add 2 tbsp curd and mix well.
- now add 1 cup basmati rice and 2½ cup water.
- cover and simmer for 20 minutes.
- finally, veg tahari is ready to serve with raita or kachumber.
