Vermicelli – 1 Cup (broken)
Water – 2 cups
Sugar – As Required
Cardamom Powder – ¼ teaspoon
Food Color – a pinch (desired)
Cashew Nuts – 10
Raisins – 10
Ghee – 2 tablespoon
Heat ½ teaspoon ghee in a pan and add vermicelli for roasting. Roast vermicelli till golden color. Keep it aside.
In the same pan, heat ½ teaspoon of ghee and add raisins and cashew nuts. Roast it and keep it aside.
Then boil water in a pan, when it’s starts boiling, add roasted vermicelli into the pan. When it half cooked, add sugar and food color. Sauté it well for a few minutes.
Cook till it turns soft and water is absorbed completely.
Sprinkle some cardamom powder on it. Mix well. Cook till it is thick.
Finally add remaining ghee and roasted raisins and cashew nuts into it. Mix well.
Tasty vermicelli kesari is ready. Serve it in the serving dish and garnish it with roasted cashew nuts. Serve it immediately.
