KAJU BARFI

INGREDIENTS:

Kaju/Cashew nuts – 1 cup

Sugar – ½ cup

Water – 5 tablespoon

Ghee – 1 tablespoon

Rose water – 1 teaspoon

Cardamom powder – 1 pinch

 

PREPARATION:

Add cashew nuts in the blender. Blend it into a fine powder and keep it aside.

Heat water in a pan. After boil it, add sugar. Stir occasionally for 3 minutes.

Add the cashew powder, stir well. Then sprinkle rose water and cardamom powder on the top of the pan.

Cook on a medium flame, stirring continuously. Cook till the mixture thickens and leaves the sides. And mixture starts coming together as dough. Switch off the flame and transfer the mixture into the flattened plate. Knead well to form smooth dough.

Grease a plate with melted ghee, transfer the dough on the plate and roll it out into round shape using a rolling pin.

Allow it to cool. Cut it into equal sized diamond shape using a knife.

Serve it in the happy moments. Store it in the airtight container.
