chicken fried rice

 

 

INGREDIENTS:

  • Chicken – 200 gms
  • White Rice – 4 cups
  • Garlic – 1 tablespoon (Chopped)
  • Soya sauce – 1 teaspoon
  • Vinegar – 1 teaspoon
  • Chilli sauce – ½ teaspoon
  • Pepper powder – ¼ teaspoon
  • Sesame oil – 2 tablespoon
  • Onion – 1
  • Spring onion – 2
  • Bell pepper – ½ cup (chopped)
  • Carrot – 1 (chopped)
  • Salt – as needed

METHOD:

Wash rice and cook the rice in 5 cups of water. Drain the cooked rice and cool it completely.

Add 1 teaspoon oil in a pan, add chicken to it and cook on a low flame.

When the chicken is cooked, pour the all sauces to the hot chicken.

Heat a pan and add oil. Add garlic, star anise and mace for a minute.

Add spring onion and sliced onions into it and fry for 3 minutes.

Pour the chicken along with the sauces and add vinegar to it. Cook till the sauce thickens.

Add capsicum and fry till half cooked.

Add rice, pepper powder, salt, chopped carrot and green parts of the spring onions. Add very little salt to it.

Mix well and fry for 3 minutes. Garnish it with sprigs of celery leaves. Serve it immediately.
