Baby Potato Fry

Baby Potato Fry is an easy and simple pan-fry roasted recipe made with small or baby potatoes. Lets have a look at the recipe.

INGREDIENTS

FOR PRESSURE COOKING:

  • 2 cup water
  • 9 baby potato / aloo
  • 1 tsp salt

FOR MASALA:

  • 2 tbsp oil
  • 1 tsp mustard
  • ½ tsp urad dal
  • ½ tsp cumin / jeera
  • pinch hing / asafoetida
  • few curry leaves
  • ½ onionfinely chopped
  • 1 tsp ginger garlic paste
  • ¼ tsp turmeric
  • ½ tsp kashmiri red chilli powder
  • ½ tsp coriander powder
  • ½ tsp garam masala
  • ½ tsp aamchur
  • ½ tsp salt
  • 2 tbsp corianderfinely chopped

INSTRUCTIONS

  • firstly, in a pressure cooker take 2 cup water and steam 9 baby potato with 1 tsp salt for 2 whistles.
  • cool completely and peel the skin of the potato.
  • in a large kadai heat, 2 tbsp oil add boiled potato.
  • saute and roast until the potato turns golden brown.
  • keep the roasted potato aside.
  • in the same oil splutter 1 tsp mustard, ½ tsp urad dal, ½ tsp cumin, pinch hing and few curry leaves.
  • also, saute ½ onion and 1 tsp ginger garlic paste well.
  • further, add ¼ tsp turmeric, ½ tsp chilli powder, ½ tsp coriander powder, ½ tsp garam masala, ½ tsp aamchur and ½ tsp salt.
  • now add roasted potato.
  • saute on low flame until spices are coated well.
  • finally, add 2 tbsp coriander and enjoy baby potato fry.
